Chicken Salad

Chicken Salad! One of my favorite lunch options.

Make Your Own Mayo.

Ingredients:

1 egg

lemon juice *to taste

1 tablespoon ground mustard

1 cup avocado oil (you can also use light olive oil or fractionated coconut oil)

1 TBSP white vinegar

1/4 tsp salt

To make:

Combine all ingredients into a blender or food processor. Blend until smooth & creamy. Enjoy.

Chicken Salad:

2 TBSP Homemade mayo

1 Tbsp mustard

2 cups cooked chicken

Combine all ingredients. Serve on lettuce or bread of choice.
